Rolada s ajvarom / Ajvar (pepper relish) roll

Zamatanje u površinu oduvijek je u izravnoj vezi s religioznim, mitološkim i gastronomskim čuvanjem. Odotuda vjerojatno potječe običaj da se za Uskrs jedu razne rolade.
Možda vas tradicionalne rolade od biskvita premazane pekmezom podsjećaju na bakine kolače, ali rolada ne mora biti nužno slatka. Dapače, posebno su ukusne raznolike mesne ili povrtne rolade, ali i slane biskvitne rolade, vrlo često punjene nadjevom od svježeg sira. Dodajte mu sezonsko povrće poput vlasca ili mladog luka i dobit ćete ukusno i dekorativno predjelo.  Slani biskvit možete učiniti prigodno proljetno šarenim dodajući mu kuhani špinat za zelenu boju, ajvar za narančastu ili mak za točkasti izgled. Ovakve rolade pršte bojama i govore proljeće na tanjuru.
Ovo je, između ostalog, još jedan dobar način za utrošiti kuhana jaja koja su nam ostala od pisanica. Narežite ih na sitne kockice i dodajte nadjevu za roladu.

Tijesto:
  • 6 jaja
  • 3 žlice ajvara
  • 5 žlica glatkog brašna
  • 5 žlica mlijeka
  • 1 žličica soli
  • 1 vrećica praška za pecivo
Nadjev:
  • 250 g svježeg sira
  • 180 g kiselog vrhnja
  • naribani tvrdi sir
  • 100 g tanko rezane šunke
  • sjeckani peršin / vlasac / mladi luk
  • sol 
  • papar
1. Za tijesto: odvojite bjelanjke od žutanjaka. Izmiksajte bjelanjke sa žličicom soli u čvrsti snijeg. Umiksajte žutanjke pa dodajte mlijeko i ajvar. Ručno umiješajte prosijano brašno s praškom za pecivo.
2. Pećnicu ugrijte na 180 C.
3. Veliki pleh - 35 x 40 cm - namastite i obložite papirom za pečenje. Na njega ravnomjerno rasporedite smjesu. Udarite lagano tacnom nekoliko puta o stol kako biste razbili mjehuriće zraka u smjesi.
4. Pecite 15-ak min. (provjera čačkalicom). Vrući biskvit zajedno s pek papirom na kojemu se pekao zarolajte počevši od duže stranice i ostavite tako dok se potpuno ne ohladi. 
5. U međuvremenu napravite nadjev: pomiješajte svježi sir, kiselo vrhnje, sjeckano začinsko bilje. Posolite i popaprite po ukusu. Ako želite, možete dodati kuhana jaja narezana na sitne kockice.
6. Odmotajte roladu. Premažite nadjevom. Po cijelom nadjevu posipajte naribani sir pa po tome poslažite tanko rezanu šunku. Zarolajte natrag i ostavite u hladnjaku da se stegne.
7. Režite na ploške i poslužite hladno.

Various rolls have always been associated with religious, mythological and gastronomic preservation. That is probably why so many rolls, both sweet and savory, have always been a traditional part of Easter food in Croatia and this part of Europe.

When we say "roll" or "roulade", I guess the first association is sweet cinnamon rolls and such, as well as sponge cake roulade filled with chocolate or whipped cream and fruit. However, there are interesting savory rolls, both delicious and decorative, that can be the best appetizer. Such is this roll. And what about this pepper relish?

Pepper relish in Croatia is called ajvar. It's originally made of roasted (today sometimes cooked) red peppers. The so-called rog peppers are most often used - they're horn-shaped with thick flesh. Usually some eggplants are added, as well as garlic, sometimes chili. Ajvar became popular throughout former Yugoslavia after World War II. Depending on added chili, it can be sweet, piquant or very hot. It is usually consumed as bread spread, salad or a side dish.

Ajvar is traditionally made in mid-autumn and preserved in jars. The preparation is not that simple, as it takes long time and manual labor (stirring, peeling of the roasted peppers and eggplants). Once the roasted vegetables are peeled, they're usually ground in a mill and then stewed for several hours in huge pots. Salt is also added, as well as sunflower oil in order to enhance further preservation (and sometimes a bit of vinegar). Hot ajvar is poured into hot sterilized glass jars and sealed.

I wanted to explain the notion of ajvar because it is used in this roll. Only 3 tbsp of it give the roll a nice orange color. You can play with natural colors and add cooked chopped spinach for green color, or poppy seed for dotted effect. These are all vivacious and natural, spring colors.

If you don't have ajvar available, use any other similar pepper relish / spread.
If you have any leftover eggs from this Easter weekend, chop them into tiny slices and use for the filling of this roll.

For the sponge
  • 6 eggs
  • 3 tbsp ajvar (or other pepper relish / spread)
  • 5 tbsp all purpose flour
  • 5 tbsp milk
  • 1 tsp salt
  • 0.45 oz (13 g) baking powder
For the filling
  • 250 g cottage cheese
  • 180 g sour cream
  • 100 g thinly sliced ham
  • grated cheese
  • fresh parsley / chives
  • salt pepper
1. Make the sponge: separate whites from yolks. Beat whites with a pinch of salt until stiff peaks form. Add yolks to it, then milk and ajvar. In the end, add sifted flour with baking powder.
2. Preheat oven to 180 C.
3. Lightly grease baking sheet (35 x 40 cm) and cover with parchment paper. 
4. Spread the sponge batter evenly onto it. Bake for 15 minutes (test with skewer). While hot, roll it together with parchment paper, beginning from the longer side. Let stand until it cools completely.
5. In the meantime, make the filling: combine cottage cheese with sour cream. Add salt, pepper and fresh chopped parsley and / or chives.
6. Spread rolled sponge and put the filling over it surface, evenly. Sprinkle with grated cheese and place thin ham slices over the surface. Roll it back in and let cool in the fridge.
7. Slice before serving and serve cold.

  1. Ovo je baš simpatično jer ja sam danas jela ovakvu roladu, samo u zelenoj verziji - sa špinatom :) Prije sam radila i ovu s ajvarom, al sad kako smo nekako bili u strci, mama je stigla napravit samo sa špinatom.

  2. Meni rolati i dalje zadaju problem, tako da ja ovo pravim uglavnom u vidu slane torte/kocki :P
    Slika me je odmah privukla, volim ovako savršeno umotane rolate :))
    Mislim da bi se u fil odlično uklopio i prstohvat ili dva suvih ljutih papričica :)

    1. i slane kocke su meni jako dekorativne i zgodne...nisam nikad radila u tom obliku.
      Za rolate, bilo slatkoe ili slane, samo treba neki provjereni pouzdani recept. Meni se ovaj pokazao odličnim.
      Slažem se s tobom za fil, uvijek sam za dodatak ljutine :)

  3. Ja obozavam i slane i slatke rolate. Mislim da slane cak i vise volim... Pravimo slican sa ajvarom i mnogo je dobar... :)

  5. Tamara - I must say this post makes an excellent reading. It's a great recipe too, especially when roasted peppers are involved! It seems to me that traditional recipes regardless of cultures tend to require tedious preparation, but I guess that's what make the recipes special:) I love a savory roll like this!

      I agree on the traditional recipes, mostly they do require long preparations (especially yeast dough, for example), but the result always makes it worth the effort.
      Some of my fondest memories are my mom and grandma making ajvar on an old wood stove in our weekend house.

  15. Super si napravila ovu roladu, sastojci su super i izgleda jako lijepo ! Volim slane rolade iako ih rijetko radim i slane i slatke, ali kada vidim ovako odličnu izvedbu odmah dobijem želju da je i ja npravim :)

  17. Nešto slično sam probala prošle godine na jednom susretu i moram priznat da sam bila oduševljena koliko se ajvar (po meni začuđujuće) savršeno uklopia. Savršeno!
